Imagine, if you will, a dandy of a gentleman criss-crossing the streets of Cambridge on a gearless cycle complete with penny farthing front wheel. Then imagine if this particular gentleman, an unlikely combination of Uncle Pennybags, Eustace Tilley, and a circus bear, decided to operate a pizzeria. What kind of pizza would this sartorially splendid blueblood decide to serve the fine people of the commonwealth?
Here to answer the many questions raised by this common fantasy is the local pizza chain, the Upper Crust Pizzeria. The Upper Crust has been around for a mere eight years but already has 13 locations and has been named Boston’s Best Pizza for the past two years by the Improper Bostonian. And who am I to argue?
A contributor to Pizza Friday, that’s who. The pizza here has some great features: a very thin crust that borders on crispy but still allows for folding; some noticably tasty cheese. The sauce level is very low, which is an aesthetic choice and works fine, but I would prefer that the sauce not be supplemented by chunky tomatoes as it is here. The garlic, while not overpowering, stood out in both taste and smell. And, in a Pizza Friday first, there was a very heavy dose of oregano gumming up the works. In short, the name is appropriate in the literal sense since the crust is this pizza’s best feature; but when it comes to providing high class pizza, the Upper Crust doesn’t yet have the market cornered.
