Emma’s is a small pizzeria in the Kendall Square area of Cambridge.  The dining room is no larger than your average living room, so the waiting time can get awfully long awfully fast.  We arrived to find a 20-25 minute wait with only three groups of diners ahead of us.  There is, however, a counter with stools at the storefront window, and they offered to begin serving us immediately if we sat there (which we gladly did).  Presumably because of the size of the room, the waitstaff is kept small (three waiters on a Friday night), and they also handle seating duties, so they have a lot on their plates (so to speak).  That said, I’ve had much longer waits in much less busy and more highly staffed restaurants.  Once we placed our order in fact (for a half-cheese, half-monstrosity pizza), the food came out in no time.  The pizza itself features a thin crust, but only its outer crust is as crispy as you might expect: the body of the pizza, so to speak, is soft and folds easily.  Though I would have preferred a more cracker-like crust, it was nothing to complain about.  The sauce gave an indication of red pepper chips or roasted tomatoes, but the cheese was ideal.  At 12”, the small pizza is perfectly sized to split between two for dinner.
